If you’re anything like me, some nights you want dinner to feel exciting… but you do not want it to take an hour. That’s where these Chicken Fajita Quesadillas come in. They’re colorful, packed with flavor, and ready in about 20 minutes — perfect for busy weeknights, solo dinners, or when the kids “randomly” stop by. 😉
🛒 Ingredients
Serves 4 (or 2 very hungry people)
2 cups cooked chicken breast, sliced or shredded
(Rotisserie chicken works beautifully for speed!)1 tablespoon olive oil
1 bell pepper, thinly sliced (any color)
1 small onion, thinly sliced
1 packet fajita seasoning
(or 2 teaspoons chili powder + 1 teaspoon cumin + ½ teaspoon paprika + ½ teaspoon garlic powder)1 cup shredded Mexican blend cheese
(or cheddar + Monterey Jack)4 large flour tortillas
Optional toppings: sour cream, salsa, guacamole, fresh cilantro

1️⃣ Sauté the Veggies
Heat olive oil in a large skillet over medium heat. Add the sliced bell pepper and onion. Cook for about 4–5 minutes until they soften and get slightly caramelized. That smell? That’s flavor building.
2️⃣ Add the Chicken
Stir in the cooked chicken and fajita seasoning. Cook for another 3–4 minutes, stirring occasionally, until everything is heated through and coated in that smoky, savory goodness.
(If it looks dry, add 1–2 tablespoons of water to help the seasoning spread evenly.)
3️⃣ Build the Quesadillas
Reduce heat to medium-low.
Place a tortilla in a clean skillet (or wipe out the one you used).
Sprinkle cheese on half the tortilla
Spoon some of the chicken fajita mixture on top
Add a little more cheese (because we don’t measure cheese with our hearts — we measure generously 😉)
Fold the tortilla in half
4️⃣ Cook Until Golden
Cook each quesadilla 2–3 minutes per side until golden brown and crispy, and the cheese is melted.
5️⃣ Slice & Serve
Let rest for a minute (so the cheese doesn’t slide everywhere). Slice into wedges and serve with sour cream, salsa, or guacamole.
